White Bean Pâté & Black Olive Garnish

Paté for 4 or Aperitifs for 10-12 
400 g of white beans 
¼ chopped onions 
1 tablespoon Mayonnaise 
1 sprig of fresh parsley 
150 grams stoned black olives 
1 garlic clove 
Salt and black pepper 
Olive oil
1.   If you are starting from dried beans you need to soak them over night in three times their depth of cold water. 
2.   Cook the beans with bay leaves for 50 minutes to 1 ½ hours, remember that you want them soft but still holding their shape. Once they are cooked leave them to cool down. 
3.   With the white beans in a bowl add the chopped onion, the mayonnaise, the parsley and a bit of salt and pepper to blend together. 
4.   In a separate bowl blend together the stoned black olives, the garlic clove and a tablespoon of olive oil. 
5.   To serve place the bean pâté into several small dishes or even on a slice of tomato, or in one large bowl. Gently place the black olive garnish on the top.
